 Selecting PerfectionThe Bellevue Club offers a multitude of delicious wines. In fact, we’re some of the biggest fans of the grape. In honor of the Pacific Northwest’s hundreds of vineyards and the Club’s continuously changing wine list, we’d like to welcome you to the new column all about vino. Throughout this column, you will find wines expertly selected for holidays and other occasions, perfect pairings, an in-depth look at our many lists at the Club and so much more. The Club’s selection process is an important aspect in delivering the best bottles to our members, and we take advantage of our prime location. Our wine lists in Polaris Grill, Splash and Cosmos are a salute to the Pacific Northwest with our primary focus on vineyards in Washington, Oregon, Idaho and British Columbia. We take our time selecting the right balance and creating our list. From reds to whites to boutiques, the wine list is expertly crafted. Local, sustainable bottles are the underlying theme and part of the Club’s high standards. Perhaps the greatest grape of the vineyard in Polaris Grill is recognized in our boutique list. These vintage wines are fleeting and incredibly rare, so we’re constantly on the hunt for new selections. It’s all about word of mouth. Most of the time, we don’t have the opportunity to sample the wines before they grace the boutique list. Instead, we must rely on word of mouth, reputation and perhaps, a cult following. These bottles are sparsely allocated, and the Club typically receives three to six bottles. We may never see that wine again. And that’s part of the fun! So, if you find a bottle on our list that intrigues you, remember that it may not be there for long. The Bellevue Club is considered an on-premises location. We receive “restaurant-only” wines, meaning that you can’t find them in your local and chain grocery stores. We try to have wines that are unique to us, which means you’re getting a very special selection in our fine restaurants and during our banquets. With about 150 different bottles of wine in Polaris Grill alone, we can promise options and guarantee that each was carefully selected for your exclusive enjoyment. Have fun, and drink up! |
