   If you choose to stay home for Valentine’s Day, your loved ones will enjoy this easy, homemade sweet treat.
 
Yields 30 desserts
 
1 cup water   4 eggs
3½ ounces butter, chopped   Creamy filling, such as whipped cream
¾ cup plain flour, sifted Melted dark chocolate or hot toffee for topping
 
   Preheat oven to 400 degrees. Place the water and butter in a saucepan over low heat and cook until the butter is melted and the mixture starts to simmer. Add the flour and beat with a wooden spoon until smooth. Cook, stirring over low heat until the mixture leaves the side of the pan. Remove from the heat and gradually beat in the eggs.
   Place the mixture into a piping bag. Pipe or drop 1 tablespoon of the mixture onto baking trays lined with nonstick baking paper. Bake for 30 minutes or until light golden. Turn off the oven, keep the door slightly open using a wooden spoon and leave the profiteroles in the oven for 15 minutes or until golden and hollow-sounding when tapped. Cook on wire racks.
   Place a creamy filling of your choice, such as whipped cream, in a piping bag. Push the nozzle through the base of the profiterole and squeeze in enough mixture to fill it.
   To finish, dip the top of each profiterole in melted chocolate or hot toffee and allow to set.
